In my PC all Yuzu emulation choked without a shader cache file for the game. With Asynchronous on I don't get stuttering at all. If the videos you are seeing stuff have a little message showing shader cache loading when it stutters, they don't have a shader cache file and/or they don't have Asynchronous selected.
